El Dorado is a mixed milk Spanish style cheese, made with 50% cow and 50% sheep's milk. All the milk for this cheese is collected in the La Mancha region in Spain. It is matured for a minimum of 6 months, providing an authentic sweet complex flavour profile and smooth texture.
