Salt is a flavour enhancer. It takes the flavour of your food (or beverage) from meh to miraculous. The salt flavour is light so it in no way overpowers the caramel but again, takes up the taste a few notches. The salt adds another layer and depth of flavour. The addition of salt also softens the sweetness of the caramel.
