Creamy Goat Cheese Pasta with Sweety Drops

Sometimes the best recipes start with one ingredient you’ve never tried before.

Enter, Sweety Drops.

These tiny, bright red peppers are sweet, a little sour, and just different enough to make you wonder, Okay… what do I do with these? Our answer? Put them in pasta.

This creamy goat cheese pasta is simple, full of flavour, and comes together without a long list of ingredients. The tanginess of the goat cheese pairs beautifully with the sweet-and-sour pop of the Sweety Drops, while lemon, garlic and spinach keep everything fresh and balanced.

Creamy Goat Cheese Pasta with Sweety Drops

Serves: 4
Prep time: 10 minutes
Cook time: 20 minutes

Ingredients

  • 340 g pasta — penne, rigatoni or fusilli work well
  • 2 tbsp olive oil
  • 2–3 cloves garlic, minced
  • 4 cups fresh baby spinach
  • 150 g soft goat cheese
  • ½ cup reserved pasta water, plus more as needed
  • ½ cup Sweety Drops, drained
  • Zest of ½ lemon
  • 1 tbsp fresh lemon juice
  • Salt and freshly cracked black pepper, to taste
  • Fresh basil or parsley, for serving
  • Freshly grated Parmesan, optional

Directions

  1. Cook the pasta. Bring a large pot of salted water to a boil and cook your pasta until al dente. Before draining, reserve about one cup of pasta water.
  2. Start the sauce. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for about 30 seconds, just until fragrant.
  3. Add the spinach. Toss in the spinach and cook for a minute or two until it begins to wilt.
  4. Make it creamy. Reduce the heat to low and add the goat cheese along with about ½ cup of the reserved pasta water. Stir until the cheese melts into a smooth, creamy sauce.
  5. Bring it all together. Add the cooked pasta, Sweety Drops, lemon zest and lemon juice. Toss until everything is coated, adding a splash more pasta water if needed.
  6. Finish and serve. Season with salt and plenty of freshly cracked pepper. Top with fresh herbs and a little Parmesan if you’re feeling it.
